The popcorn we want opens generously in an ordinary pot, with room to move and a lid you can listen through.

Warm, toasted, and comfortable with salt alone. That is the flavor we are chasing. Fancy seasoning can wait.

Kernels worth keeping on the shelf, then pouring into a pot when a bowl sounds good. Holding them is the idea.

Popping
Pop it the way you already know.
A heavy pot, a thin coat of oil, and a little patience. Open a step and cook along. This is the home ritual we have in mind.
01 The pot
Use a heavy pot and a lid. Coat the base with a thin layer of oil. Add kernels in a single layer. Give them room to move.
02 The heat
Medium heat. Lid on. Shake the pot now and then so the kernels roll. You are warming them evenly.
03 The sound
The first pops are slow. Then they speed up. When the sound slows, take the pot off the heat. Salt if you want it.
An air popper is another common way. Use the method you already trust at home.
